Notes from a Weekend

I had a lovely, relaxing weekend! I hope everyone got some great workouts in and had fun. I know my friend and past client Gillian killed it this weekend – I saw this photo on her Facebook Saturday morning: “10 miles before 10am. Officially done with winter treadmill hibernation.” I’m so proud of her! She’s running and racing and posting some awesome times. When I met her she was treadmill all the way, so I’m blown away with how far she’s come.

We have Aussie friends visiting us, who are in the middle of traveling the world (as Aussies often are). They brought us what they promise is life-changingly good hot chocolate, as well as this cool-looking hot chocolate frother, which I can’t wait to try out.

I made a huge pot of veggie brown rice risotto for my son. Lots of different colored veggies, with garlic, thyme and oregano for seasoning.

Then I added Parmesan, butternut squash purée and cannellini beans. It doesn’t look as pretty, but he loves these veggie risottos. I froze a bunch, too.

I’m more than ready for warmer weather. This weekend in the park, I saw a couple of brave souls running in shorts. On my way home I saw this cute graffiti, which reminded me my lovely mother-in-law sent me a Lululemon gift card for my birthday. Time to revisit my workout gear board on Pinterest  and do a little retail therapy!
