Vermont Getaway

 

We just got back from a mini-vacation in beautiful Vermont. It was such a fun trip – we flew up to Burlington and stayed overnight with a good friend and her kiddos. It was in the 90s in Vermont over the weekend, which is crazy hot for that mild, green state! So we had a very summery cookout, with veggie, shrimp and chicken skewers, (plus an icy-cold beer while we were prepping!) and an after dinner walk down by Lake Champlain for ice cream.

Roman had a lot of fun enjoying our friend’s yard, running around like a crazy person and at one point deciding to use me as his stage!

Whenever we go to Vermont we always threaten to spend more time in Burlington, but we usually don’t get a chance, since we’re always en route to Grandma’s house! 🙂 We tried to prep Roman by teaching him to say ‘Grandma’ – lets just say it’s a work in progress! Grandma was very excited to see Roman and he had a lot of fun. Here he is smelling flowers in her garden. He’s so cute sometimes it kills me.

We had so much fun doing things that I think everyone outside of New York City doesn’t think twice about, like going shopping in a market bigger than 600 square feet! With a shopping cart! That kids can ride in!

I’m sure everyone in the market thought us taking photos was completely normal.

It cooled down to regular summery Vermont temperatures of mid-70s by the time we got to Grandma’s house (very happy about that!) so I took advantage of the weather to go for a great run with my little guy (who promptly fell asleep) and of course I got some heavy lifting in as well. 🙂Vermont Getaway - Fine Fit Day

While we were there, I made some delicious eggs one morning for breakfast – I had these for brunch a week ago with a friend and they were so good. It’s so simple – just scrambled eggs with scallions and cream cheese. My scrambled eggs trick is to add a tablespoon of milk for each egg you use, and whisk them up really well before cooking. I cook them on a very low heat, only stirring 3 or 4 times, then take them off the stove just before they’re done. For these eggs, I stirred in the scallions before pouring in the pan, then just dropped in teaspoons of cream cheese as they started cooking. Holy delicious.

We ate out a couple of times, but did lots of cooking at home too, which is great, because my son’s artwork on a menu pretty much sums up my opinions of most restaurants’ ‘Kids Menus’:

One of the best parts of our trip was finally discovering what all those parents who rave about carseats as a sleeping aid are talking about.

Worked like a charm. So during nap time every day in the car, Fran and I went for long drives and enjoyed the gorgeous Vermont scenery:

And of course a Vermont vacation is not complete without a good “burn”. I got teased for having a glass of red wine instead of a beer by the bonfire, but I don’t care! 🙂

We had such a nice getaway. Usually we just go up for a weekend, so it was great to tack on a couple of extra days and feel like we could relax a bit.
